This is the post that was supposed to be entitled something like "Journey to Preparing a Fish." Because a friend brought this fresh from the island for Andrea and me a few weeks ago.
But it was a really gross journey, so I decided to spare you the details. And my hands were dirty, and it's hard to take pictures when your hands are dirty.
The fish now resides in my freezer, sans insides, but with scales intact.
